Kagome Confirms Inhibitory Function of Purple Carrots on the Action of Acetylcholinesterase

Kagome Co., Ltd. corporate planning headquarters’ research institute, through tests carried out during collaborative research with the National Institute of Vegetable and Tea Science of NARO (National Agriculture and Food Research Organization), has confirmed the inhibitory function of purple carrots on the action of acetylcholinesterase. The results of the current research therefore raise the expectation that purple carrots will have an improvement effect on Alzheimer's disease. The content of this research was announced at the 13th Annual Meeting of the Japanese Society for Food Factors.
It was confirmed through the current research that purple carrots had a similar inhibitory function on the action of acetylcholinesterase as that of Alzheimer’s disease medications. Although it is still unclear what substance causes this effect, it is thought that it may be due to the purple pigment anthocyanin found in purple carrots. It is now expected that through the consumption of purple carrots the progress of the symptoms of Alzheimer’s disease can be suppressed and that cerebral functions can be maintained.
